Gulf Pig Dinner Sunday June 10th 2012

It’s that time again, we were able to secure a location for the next Gulf Pig Dinner to be held in June. We are back on a Sunday night and have a full bar available. For this dinner in addition to a Wine Pairing, you will have the option of a Beer Pairing as well as a selection of specialty cocktails designed around the menu.

These can be purchased the night of the event.

We are continuing the Contemporary Southern theme for these meals AND the menu will be all new (no repeats). We had so many ideas left over from planning the 1st one we wanted to continue with it and share with everybody. Think flavors you would have for a Sunday meal at your Grandmother’s house but with a modern “Gulf Pig” spin on them. Be on the lookout for the menu soon……….

Be sure to save your tickets because on the back of each is a coupon/discount that can be used at the host restaurant anytime except for the Gulf Pig Dinner. If you happened to have missed the 1st couple of dinners, grab your tickets now for these as they tend to sell out fairly quick.  As usual once tickets are purchased, they will be mailed out to you at least a week before the dinner is to be held and will reveal the location of the meal.

You can purchase your tickets below :

Things you need to know:

  • Due to the nature of this event we require payment in advance for each ticket.
  • We will ONLY provide a full refund of the ticket price and tax if you need to cancel up to 72 hours prior to June 10th, 2012. During the 72 hour time period leading up to the dinner we will do our best to find another party to buy your tickets. If you cancel past the 72 hours or Do Not Show for the dinner no refund will be given.
  • There will be a full bar serving drinks available for purchase as well as an option to have a wine flight , a beer flight and a specialty cocktail menu available to be paired with your meals.
  • Tickets for the dinner will be mailed to your address about one week before the dinner. They will have the location of the dinner on them.
  • We will do our best to accommodate known food allergies/dietary restrictions  but please understand that all cannot be taken into consideration.

Gulf Pig “Contemporary Southern” Dinner @ Zocolo 1-29-2012

For the most recent Gulf Pig Dinner the theme was “Contemporary Southern”. We wanted to highlight our style of cuisine but have the food based on traditional southern dishes that you may eat at your grandma’s house for Sunday lunch or supper. This “theme” generated so many ideas we may do the next few dinners as “Contemporary Southern”.

For this dinner we also had local photographer Jim Noetzel follow us around the kitchen and document the evening. If you would like to see the whole set of great photos he took you can check them out here.

Buttermilk & Cheddar Profiterole with Crawfish Mousse

Korean Fried Chicken Wings with Cabbage Slaw over Sweet Potato Waffles

Coconut & Thai Chili Poached Catfish Soup with Smoked Peanuts and Micro Cilantro

Three of my biggest supporters

Coca Cola Braised Pork Belly with Griddled Corn Bread, Fried Collard Greens and Pickled Shallots

Pineapple infused with Vanilla Bean Simple Syrup

Buttermilk Pie with Mayhaw Jelly Ice Cream & White Wine Poached Golden Raisins

As always I would like to thank my great team who helped pull this off – my wife Ann, our two friends Robin & Jaimee Rice and of course  Katy and the crew at Zocolo who provided us with a great Wine Pairing for the meal as well as taking care of our guests and us :)

next Gulf Pig Dinner

I hope everyone had a Merry Christmas and a Happy New Year.  Don’t start those New Years Diet plans just yet because we have set the date for the 3rd Gulf Pig Dinner to be held on Sunday January 29th 2012 from 6-9 pm.  As usual once tickets are purchased, they will be mailed out to you at least a week before the dinner is to be held and will reveal the location of the meal.

We have set the theme for the this dinner to be Contemporary Southern, think flavors you would have for a Sunday meal at your Grandmother’s house but with a modern “Gulf Pig” spin on them. The menu is still being finalized but here are some flavors to look out for : Pimento Cheese, Fried Chicken, Sweet Potatoes, Greens, Pork, Buttermilk, Catfish just to name a few :)

Be sure to save your tickets because on the back of each is a coupon/discount that can be used at the host restaurant anytime except for the Gulf Pig Dinner. If you happened to have missed the 1st or 2nd dinner, grab your tickets now for this one as they tend to sell out fairly quick. We are really excited about this menu so much so, that the next few dinners may be based on Southern Food with all the ideas we have so far.

Gulf Pig Dinner @ Zocolo 11-6-2011

Our 2nd Gulf Pig Dinner was held on a Sunday night in early November at Zocolo in Ashley Ridge. The theme for this event was Flavors of Winter as we were coming into the colder months of Louisiana weather (although on this night it was not that cold it turns out).  Being our 2nd outing a lot of the nerves were gone but were replaced with feelings of having to top ourselves and working in a new environment. I can say that from our point of view, the night went pretty smooth. We changed a few things up in how we ran the kitchen but kept the same setup for the front of the house crew. The main difference with this one and what I should have done with the 1st was to come out and speak at the end about the meal, about Gulf Pig and what we want to do with future dinners. As usual I had a speech in mind but the second I opened my mouth to speak, I forget everything. I am pretty sure I eventually got most of what I wanted to say out there but I am sure I rambled a bit :)

Now on to the food, I wanted to focus on flavors you would associate with Fall/Winter but of course re-imagined in our own Gulf Pig way. There was only one course that didn’t make it onto the menu this time and it was a cheese course. We had a lot of ideas but the one we settled on just didn’t happen during prep so it was knocked off the menu. Other than that I think the rest of the menu was executed just as I conceptualized it.

Apple Prep

 Miso Caramel Wasabi Apples

Chorizo, Bay Scallops, Apples and Manchego Cheese Broth

Carrot & Pasilla Chili SoupPecan Beer Braised Short Ribs with Potato Parsnip Puree, Pink Peppercorn Vinaigrette and Savory Pecan Rosemary Granola

Palate Cleanser of Passion fruit Granita with “dry” Coconut Ice Cream

Our Hosts for the evening, couldn’t of done it without them

Plating Dessert….had to taste test :)

Soft Chocolate Ganache, 40 second chocolate cake, Olive Oil Pudding and Smoked Chocolate “soil”

I love this pic…Thanks Jaimee Rice
Till the next one sometime in early 2012

Gulf Pig Dinner Sunday Nov 6th 2011…..SOLD OUT

The first dinner was such a huge success we have set a date for the 2nd one.  Mark your calendars for Sunday November 6th 6-9 pm for the next Gulf Pig “Underground” Dinner. As usual once tickets are purchased, they will be mailed out to you at least a week before the dinner is to be held and will reveal the location of the meal.

With cooler weather FINALLY settling in, the theme of this dinner will pull from flavors associated with Autumn and early Winter and have our interesting touch added to them. Think Pumpkins, Braised Meats, Root Vegetables, Sage and Pecans. I am still tweaking the menu so be on the lookout for it soon but I can tell you two things:

1. It will be at least 5 1/2 courses with a surprise or two thrown in.

and

2. There will be no Sea Urchin dishes…..that dish was a tough sell :(

Be sure to save your tickets because on the back of each is a coupon/discount that can be used at the host restaurant anytime except for the Gulf Pig Dinner. If you happened to have missed the 1st dinner, grab your tickets now……this one is not to be missed :)

Gulf Pig Dinner @ Wine Country Bistro 9-18-2011

Well we were able to pull off the 1st dinner quite successfully I think. The 1st ever dinner was held at Wine Country Bistro on Line ave here in Shreveport on a Sunday evening.  When I first started the idea of having these types of dinners in this area I approached a few local restaurants with the idea but only one owner was the 1st to really jump on it and that was Jason Brady of Wine Country Bistro.

There are only a handful of local restaurants that we frequent and with 4 kids it is hard to get out much so we focus on a few places we really enjoy. We started going to Wine Country Bistro a few years ago and it has kind of been our “go to” place for date nights. Through the years we have made acquaintance with the staff of Wine Country particularly the old Chef – Michael Brady. I can tell you that until I started this whole Gulf Pig Dinners I had never met Jason personally – he must be some sort of Wine Ninja :)  Back in late July he invited me to come hang out in the kitchen for a dinner they were doing with Chef Brian Landry formerly of the Louisiana Seafood Board and now at the new Borgne in the remodeled Hyatt Regency in downtown New Orleans. You can see those pics HERE.

Now for our dinner………

the Menu

Plating the Amuse : Pork Rind, Tuna Tartare, Pickled Peach Puree and Chives

Lemongrass, Corn & Sea Urchin Chawan Mushi

Palate Cleanser : Watermelon with Sea Salt

Korean BBQ Pork with Ricotta Gnocchi, Pickled Green Tomatoes and Corn sauce

Cheese Course : Bacon Fat Doughnuts with “whipped” Blue Cheese (from Wine Country) and frozen Pineapple.

Plating the Pie Crust Panna Cotta with Red Wine Blueberries, Lemon Oil & sweetened crumbled Pie Crust.

Being the 1st Gulf Pig Dinner there was definitely a learning curve. I believe we did a pretty good job of getting across what we set out to accomplish with these meals as well as taking away some constructive  and interesting feedback in order to improve future meals. It was a fun night and we hope to do a lot more.

Not Pictured : Chef Anthony Felan who had to leave early, Jason Brady the Wine Ninja and Ann O’Boyle (who took the pic)

Without the IMMENSE  help of the Wine Country Staff and Jason Brady there would be no way that this would have been as successful as it was. Thanks for the assistance guys & gals :) When you get a chance please visit Wine Country Bistro,if not for dinner or lunch then browse their bottle shop in the back for some great Wine and Cheese selections. I am still thinking about that Blue we used ;)

For a different take on the dinner, go visit Sarah To Shreveport’s blog to see her thoughts on this meal.
